I like to avoid artificial sweeteners to keep everything healthy, so the maple syrup does all the work for me (and it tastes great!).
Inspiration for the Recipe:
I was inspired by another easy vegan cookies recipe I found online. I wanted to create a quick and easy cookie recipe with few ingredients version of them for my family, and this appears to be even better. They turned out to not be dry and crumbly like a lot of cookies with almond flour, but soft and a little chewy. I like that my family can eat them straight out of the oven and enjoy, rather than having to wait for them to cool.
These vegan peanut butter cookies are great for kids. Even the pickiest little ones will love them! They are also great for work or school, as you can make them in large batches.
As mentioned we only need 3 simple ingredients:
Natural Peanut Butter – I used a natural peanut butter consisting of only peanuts and added a pinch of salt for flavor.
Almond Flour – I used rice flour for some of the others, but I think almond flour is best. Almond flour has a subtle flavor, which makes your recipe more subtle and not too sweet.
Maple Syrup – The maple syrup helps our ingredients stick together and adds some natural sweetness. It’s important that your maple syrup is real, as the fake ones are full of sugar.
If you would like the cookies to be a touch sweeter, you can add honey or another natural sweetener to the batter.
Measurements and Servings
The ingredients below will make approximately 24 cookies
1 cup of peanut butter (approximately 250g)
1.5 cup almond flour (150g)
6 tablespoons maple syrup (130g)

Like I said, there are only three ingredients in these vegan peanut butter cookies. My method for very quickly mixing up this recipe is to use a hand mixer, but you can use a whisk if you’d prefer:
Step 1 – Mash The Peanut Butter
The first thing we need to do is mash up the peanut butter so that it’s nice and smooth. You want there to be no lumps of peanut butter, so the baking mix is nice and smoothly.
Step 2 – Add the Flour
Next we add the almond flour to our bowl. We need to mix this in very quickly after adding it, as it will clump up otherwise.
Step 3 – Add the Maple Syrup
Finally we add our maple syrup and the final ingredient, which is the egg. Mix this in by hand a little bit more than you need to, to make sure it all comes together nicely.
Step 4 – Roll and Flatten
Once we have our cookie dough mixed, roll them into small balls and place on a cookie sheet. I use a fork to create the crossed design and flatten the cookie dough balls.
Step 5 – Bake!
Now that our cookies have been placed on our baking sheet, we can pop them in the oven for 10 minutes at 350 F degrees.
Step 6 – Enjoy!
Yum! Once our cookies have cooled off a little bit we can serve. You want to make sure that the peanut butter cookie dough is not hot, otherwise you will end up with a melted mess rather than a nice crunchy cookie!
If you would like to store these peanut butter cookies for later, then you can place them in an airtight container. I recommend storing them between layers of parchment paper, as this helps keep the moisture out.
